As my knowledge goes, it's friday! It may have lost the meaning for some of you, but I bet there still are some, who are truly glad that this week has come to an end. Nevertheless, doesn't matter to which ones you would relate, a guilt-free but super delicious treat is always a good idea.
I have started my morning way too early for me today (ugh, I got used to sleep in late) so I make sure this blog post is released in time, and had the loveliest time munching my mug cake in PJ's and knee high socks, sipping some strong coffee. (It's suddenly started to rain beyond the window, and an energy boost intake was highly needed!) The sweetness from the cake went well with slightly bitter coffee. Join me, whatever the time of the day it is, sent the recipe to your friend, pay a visit to your beloved kitchen and let's bake! It won't take more than 5 mins to make!
Ingredients: (serves 1)
- 1 ripe banana
- 3 tablespoons coconut flour*
- 1 tablespoon cocoa powder
- 1 tablespoon coconut oil*
- 2 tablespoons almond milk*
- 2 tablespoons stevia*
- A pinch of baking powder
(*) I have chosen these particular ingredients for healthy option, if you don't have something at home, feel free to change stevia with any sweetener or sugar, flour, oil and milk to regular or prefered substitute.
Instructions:
- Mash the banana in the mug. Make sure your banana is ripe (has lots of black dots all over).
- Add in the flour, cocoa, oil, milk, stevia or any sweetener, don't forget the baking powder and blend well!
- Microwave it for 1-2,5 mins depending on your microwave settings. If the cake is still mushy, cook for an extra minute.
- When done - add topping. It's time to get creative here! I've added a date and some brazilian nuts, but the options are endless. Why don't you try adding a berry/fruit, cream or jam, maybe some ice cream, or make it even more amazing with an oreo cookie? You also can sprinkle a little bit of honey or any syrup.
